Adventures in Cooking: Hummingbird Cake

In the name of everything that is Southern and delicious, this cake is good. This particular recipe is good. Maybe I’m just spectacular at baking. Whatever it is, it worked.

No, this is not healthy. This is baking. It’s something I will probably make once a year (for my mother’s birthday), so who cares? I see it as more of an opportunity to really appreciate food than to stuff my face. In fact, I don’t think one person who enjoyed a slice of this didn’t savor every single bite.

I got the recipe here, lured in by a gorgeous Pinterest photo. Her photos are much prettier than mine, but here’s a quick visual of my first experience baking this cake:

The recipe calls for making three layers, but I only had two round cake pans, so… yeah.  (I did have icing left over)

The cheap fake champagne-y stuff from Walmart was pretty tasty, but couldn’t compare.
