After a day and a half of cleaning and organizing my apartment (including even more donated clothes!), I am going to reward myself with a Dr. Pepper and season 4 of Arrested Development. 🙂
Before I do that, though, I’ll be preparing a few things for a Memorial Day lunch tomorrow: homemade tangy cole slaw and simple potato salad. I’m always torn between wanting classic holiday pig-out food, and hating how I feel after eating it. I think these versions will strike a balance.
I’ll be trying out a recipe for cole slaw that’s not sugary or mayo-drenched, and fresh potato salad made with a bit of mustard, mayo, salt and pepper. Ok, and probably some chopped egg and celery. Here’s the cole slaw recipe:
Light & Tangy Cole Slaw
from For the Love of Cooking
Dressing:
1 tbsp cider vinegar
1 tsp fresh lemon juice
1 1/2 tbsp light mayonnaise
1 tbsp light sour cream (I’ll be using Greek yogurt)
1 tsp Dijon mustard
2 tsp light brown sugar
1 tsp honey
Dash of celery salt
Sea salt and freshly cracked pepper, to taste
